Avocado toast, now affectionately called avo toast, occupies just about every healthy menu and currently overloads the social media spotlight, from Instagram to Pinterest and beyond. I love avocado with or without toast, probably just as you do, but it’s time for something new. Sometimes the best ideas come about when you’re forced to work with what you have directly in front of you, or what’s currently in the fridge. Let’s start with a new contender for the cookbook, Sun-Dried Tomato Spinach Toast. I don’t know how it’s possible to have a dish so simple, healthy, and taste so good. Enjoy this one and get creative with it!

There are three more easy, healthy, vegan, and gluten-free recipes I’d like to share with you! A perfect soup for the cool months ahead is Savory Fennel Carrot Soup. Don’t let fennel scare you, trust me. I first discovered fennel only a few years ago, so don’t be ashamed if you have no idea what it looks like, I had to Google it myself. Save a search, as pictures of fennel are in the recipe for you!

The next two recipes are classics I make over and over again, and I hope you will too! Czech Chili is a wonderful vegan, lentil chili with a Czech twist including mini dumplings. This recipe is chili contest worthy, as non-vegans love it and there are never leftovers.

Macaroni & Cheese is one of the best comfort foods, so here’s a guilt-free way to enjoy it. You can prepare packaged gluten-free noodles or impress by making quick homemade noodles, also included in the recipe.
