Cauliflower Egg-less Salad

Do you love the taste or texture of egg salad but want to go vegan or cannot consume eggs? This is a recipe that you and everyone around will love!

Rinse a head of cauliflower, cut into florets, and steam for 20 minutes.

Next, rough chop the pieces into smaller chunks and set aside.

1 head cauliflower

Next chop all of the below into small pieces, mix, and set aside.

¼ c kalamata & green olives

¼ c snap peas

¼ c red onion

¼ c radishes

¼ c celery

Mix all of the below into a smooth sauce.

½ tsp onion powder

1 tbsp lemon juice

¼ tsp black pepper

½ c vegan mayo

½ tsp salt

¼ tsp dill

Pour the sauce on top of the chopped veggies, add in the cauliflower, and carefully mix together as the cauliflower will be soft. Garnish with greens or vegetables and enjoy!

SK Tip: Add different vegetables or even water chestnuts for added crunch! You can also add a bit of nutritional yeast to the mayo to give it a yellow egg yolk color. For an appetizer idea, spoon the salad into romaine lettuce leaves as pictured.
