Bosnian Burek (Pita)

  1. olive oil
  2. ¼ tsp salt
  3. ¾ c water
  4. 2 c flour
  1. 1 egg
  2. 2 c cottage cheese
  3. 2 c chopped fresh spinach
  1. The dough should be very sticky so don’t be tempted to add more flour unless necessary. Next pour a bit of olive oil to coat the dough, which will combat the stickiness. Let that sit for a few minutes.
  2. Next the dough needs to be rolled out and stretched very thin and again brushed with oil.
  3. Mix the egg, cottage cheese, and spinach for the filling.
  4. On the rolled out dough, the traditional way to add the filling is in rows with space between each line of filling. Once the first roll is made, slice it from the large piece of dough and the next roll can be made.
  5. Then wrap each roll in a coil shape, one around the other.
  6. Set the oven at 375 degrees and bake for about 45 minutes, with the coils on greased pans.
  7. Cut into pie slices and enjoy!
  1. SK Tip: In some traditional recipes, feta cheese or meat is added instead!
